The Protected Designation of Origin Umbria refers to extra virgin olive oil made primarily from the fruits of the olive variety Dolce Agogia, Frantoio, Moraiolo, Leccino, Rajo, San Felice. The name, given to the entire regional production, includes five geographical indications: Colli Amerini Colli Assisi-Spoleto, Colli del Trasimeno, Colli Martani Colli Orvieto.

The Colli Assisi-Spoleto is from Gubbio to Terni. In these territories have spread varieties Frantoio, Moraiolo, Leccino, Rajo, San Felice and local Pocciolo and Vocio. The other sub-area of ​​Terni is the Colli Amerini with Frantoio, Moraiolo, Leccino, Rajo and Tendellone. Around Lake Trasimeno it is in the Colli del Trasimeno with the native Dolce Agogia. In Colli Martani is the Correggiolo, Massa Martana alongside classic cultivars Frantoio, Moraiolo and Leccino that predominate in the hills of Orvieto.

The extra virgin olive oil Umbria PDO has a nice color that ranges from deep green to golden yellow. The aroma is complex and elegant, with ample hints of herbs, artichoke and wild thistle, with a satisfying balsamic note and a perfect balance between bitter and spicy. The Protected Designation of Origin Umbria can also submit additional perfumes and scents according to the five existing geographical indications.
