Red potato
The cultivation of potatoes was introduced to Umbria in the first half of the 18th century. It is only recently, though, that a particular type of potato is being cultivated at Colfiorito: the red potato. It is not a native variety, but a selection of potatoes of Dutch origin and has become perfectly acclimatized to this area.
Red potatoes are long, oval and irregular in shape, with a red skin and light yellow flesh and should be kept in a cool place.
They are ideal for making dumplings and for grilling.
The production of this particular variety of potato is very limited and producers sell their products directly to the consumer.
