This is an ancient cheese that gets its name from the place where it was invented. Grello is a hamlet in the municipality of Gualdo Tadino located near Fossato di Vico and Gubbio. It is known for its perfectly preserved castle, which the populations of the plain used as a shelter, ever since the 1st century AD. The earliest written evidence of this cheese dates back to that period. Grello has this typical shape because of the basket it is formed in.
