A PORTRAIT OF THE WINERY

The cantina is located within the walls of the wonderful Castello di Sobrano, which has also given the winery its name. The history of the castle goes back to the 13th century and the breathtaking landscape of the hills around Todi only add to its mystical allure. His modern passion for wine was the driving force that led the owner, Giovanni Palmucci, to dedicate himself with great commitment to the district’s most important grape, grechetto, which had almost disappeared into the fog of history when it was rediscovered and enthusiastically reintroduced over the last twenty years. The most recent history of this estate, in fact, starts with this autochthonous varietal and the wine made with it is highly personal and expressive. The meticulous care with which the estate tends to its white grape vineyards also extends to the rest of their vineyards. Everything is done by hand, one step at a time, from the pruning to the guiding and, finally, to the all-important harvest. The winemaking itself is no exception to this rule, all manually processed and without any additives.

THE VINEYARD AND TERROIR

The terrain the vineyards grow on has a medium consistency of clayey-sandy soil and benefits from south and southeastern exposure, making the Sobrano vineyards a truly special terroir. The fine breeze that blows over the hilltops on which the vineyards sit helps keep the ripening fruit dry and healthy, rainwater drains away easily and all these elements together ensure concentration and longevity.

THE GRAPE VARIETIES GROWN

Apart from grechetto di Todi, the other white grapes grown here are chardonnay and pinot bianco, while the black grapes include merlot, sangiovese grosso and cabernet sauvignon.

WINES

Every bottle made here is a compilation of all the goodness that nature has to offer and the flavours and aromas that the grapes cull from their vines and the land. Donna Sabina is a DoC GreChetto Di toDi Superiore which is fermented and aged in old French oak tonneaux. The wine remains on its lees for about a year, during which time it is often stirred by hand. Their DoC GreChetto Di toDi, which is refined in steel vats, should not be underestimated and their toDi Merlot is a fruity red.
