A PORTRAIT OF THE WINERY

It’s true, wine is a nectar to be enjoyed as adults, and yet the culture and passion for this magical drink
can have roots that go back in time, and it certainly does not finish once poured into the glass. This must have been true for Lauretta Polidori, who as a child grew up participating in a family tradition made up of apparently simple rites that were actually deeply evocative and symbolic. Like those of her grandfather Nello, who in 1938 planted the first three hectares of his vineyard on the Altotevere hills. He passed the enterprise on to his son Carlo, who worked hard to expand the vineyards in the 1960s and 70s. It was he who, perhaps with the sort of long-range vision only true pioneers have, or because he took to heart words of advice from a German doctor fascinated by his wines, decided to focus on organic cultivation that respected nature and safeguarded the area’s traditions. Lauretta, who now manages the winery, is the perfect modern generation to come from such a great family history, even though it goes without saying that she has applied many of her own modern ideas to the winery as well. The Colle del Sole winery adheres to the strict rules that regulate organic cultivation and has an ICEA (Institute for Ethical and Environmental Certification) certificate.

THE VINEYARD AND TERROIR

Machines, and not chemicals, are used to remove grass and weeds from the 24 hectares of grapevines that sit at an altitude of 350 metres, and the fertilizer used is strictly vegetable. While the stony ground makes cultivation difficult, the low yield per hectare brings forth wine grapes of extraordinary quality.

THE GRAPE VARIETIES GROWN

Trebbiano toscano, verdicchio, grechetto and chardonnay in diminishing proportions for white wines. Sangiovese grosso and piccolo, merlot,
ciliegiolo and cabernet sauvignon for the reds.

WINES

The red wine is aged in oak barrels and offers the aroma of small red fruit and some spice, while its flavour is balanced and makes it an easy to drink wine. Their rosAto is crispy and aromatic, the ideal accompaniment to local cold cuts and fresh cheese.
